A RECIPE WORTH SHARING | RECIPE BY 부부달콤

What: Coconut cookies with just 3 ingredients by 부부달콤.

Taste: Full of coconut, sweet, and crunchy!

How It’s Made: Mix ingredients in one bowl. Flatten into 9 circles. Bake for 15-25 min at 325°F, until golden brown.

Notes & Tips:

  • Use a digital scale to measure if you can.

  • I baked mine for about 25 minutes, that’s when the entire tops of the cookies were golden. Check at the 20 minute mark to see how golden they are.

  • I added in vanilla paste, but not necessary.

Ingredients:

  • 2 egg whites

  • 65g sugar (do 55g for less sugar)

  • 2 cups shredded coconut (135g)

  • 1/2 tsp vanilla bean paste (optional)

Instructions:

  • Preheat oven to 325°F.

  • Whisk 2 egg whites with 65g sugar. Once mixed, add in 135g coconut and 1/2 tsp vanilla bean paste.

  • Form into 9 equal balls and flatten them out on a baking sheet with parchment paper. Bake until golden brown (15 to 25 min), checking at the 20 minute mark.

  • Let it cool and enjoy!
