The Most Delicious Balsamic Vinegar Kale Salad

What: Honestly the best balsamic vinegar kale salad. Yeah, sure there are a lot of kale salads online, but this salad literally had all my coworkers asking me to share the recipe because it’s that good. The salad add-ons: sun dried tomatoes, feta cheese, nutritional yeast, and more make it really good and brings out the flavors.
Taste: Extremely flavorful and savory. You get multiple flavors from the balsamic vinegar & olive oil dressing complimented by all the add-ons: chicken, feta cheese, sun dried tomatoes, cilantro, and more.
How It’s Made: Sauté the ingredients over the stove and season throughout.
What to Serve it With: As an entire meal or as a side dish!
The Most Delicious Balsamic Vinegar Kale Salad
Ingredients
- 3 cups kale, chopped
- 1/2 cup rotisserie chicken
- Handful frozen vegetables, thawed
- Olive oil
- 2 Tbsp + 1 tsp balsamic vinegar
- 2 Tbsp cilantro, chopped
- Sun dried tomatoes
- Feta cheese, crumbled
- Garlic powder
- Onion powder
- Red chilli pepper flakes
- Nutritional Yeast
- Pink sea salt
- Black Pepper
Instructions
- On medium heat, heat 1/2 Tbsp olive oil in a medium pan. Add 1/2 cup of rotisserie chicken and a handful of thawed vegetables.
- Mix chicken and vegetables in olive oil to heat up then season by lightly sprinkling in the following: Onion powder, Garlic powder, Nutritional Yeast, Salt, and Black pepper. Set aside in a separate bowl.
- In the same pan, heat in 1 Tbsp of olive oil then add in 1 cup of kale. Repeat and layer 2 more times until you used up a total of 3 Tbsp olive oil & 3 cups of kale.
- Sauté frequently to cook kale until it turns into a deep forrest green. Then, add the following seasonings by lightly sprinkling in: Onion powder, Garlic powder, Nutritional Yeast, Red Chili Pepper Flakes, Salt, and Black pepper. Mix to season kale.
- Reduce heat to medium low to not over cook kale. Add in the seasoned chicken and vegetables to the kale. Mix around. Then, add in the following toppings and MIX: 2 Tbsp + 1 tsp balsamic vinegar, chopped cilantro, sun dried tomatoes, and more nutritional yeast.
- Mix then finish off with a sprinkle of feta cheese on top!
- Optional toppings that also taste good: corn, black beans, olives, roasted almonds, dried cranberries, and roasted pecans
