Baby Bok Choy Quick Salad | 청경채 겉절이

 

Pronounced: Cheonggyeongchae geotjeori

This is a banchan that my Mom makes time to time. It’s not something we have often, but when we do, I instantly want to buy all the baby bok choys at the market and make this to compliment every meal.

It’s very easy to make. No cooking. No steaming. No boiling. It’s straight to the point. It’s ever so fresh, juicy, and refreshing, and compliments a light to heavy meal. This goes well with any dish whether that be with rice, a meaty steak, or some sort of Korean soup like Doenjang-Jjigae (Korean Soybean Stew) or Seolleongtang (Korean Broth Soup).

Mama Ahn served this with her homemade Seolleongtang and fried tofu. This Bok Choy Salad was the first banchan to be completely emptied as we ate it.

청경채 겉절이 | Baby Bok Choy Quick Salad

Prep Time: 5 minutes
Cook time: 5 minutes
Serving Size: 4 Servings

Ingredients:

- 10 Baby Bok Choy bundles, chopped*
- 1 TBSP garlic, chopped
- 1 TBSP Korean chili powder
*
- 1/2 TBSP + 1/2 TSP white sugar
- 1 TBSP fish sauce
*
- 1 TBSP white vinegar
- 1 1/2 TBSP + 1 TSP sesame oil
- 1/2 TBSP sesame seeds, roasted

*the baby bok choy my mom used were pretty small, so keep this in mind in order to maintain ratio
*Use high quality korean chili powder from the korean market. if you buy the cheap stuff, it is most likely very old
*the fish sauce brand we always use is three crabs brand fish sauce

1. Remove the bottom stem of the boy choy and separate each stalk individually. Wash under cold water and pat dry.

2. Cut bok choy stalks into smaller pieces making sure the stalks are not too thick or long.

3. In a medium bowl, combine the rest of the ingredients; garlic, sugar, fish sauce, white vinegar, sesame oil, and sesame seeds. Adjust seasoning to taste.
TIP: Use your hands to gently mix the ingredients. You want to be gentle as to keep structure of the bok choy stalks

4. Serve with your favorite dishes! Best served immediately. Refrigerate any leftovers, but it will get watery after a day or so. Enjoy!!
